  • 1/4 cup melted butter
  • 8 oz mascarpone cheese, softened
  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup fresh orange juice
  • Zest of 1 orange
  • 1/2 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Prepare the crust: Mix the crushed graham crackers with melted butter until combined. Press firmly into the base of a springform pan and bake at 350°F (175°C) for 8 minutes.
  2. Make the cheesecake filling: In a mixing bowl, combine mascarpone cheese, cream cheese, and sugar. Blend until smooth, then add eggs, orange juice, zest, and vanilla extract, mixing until incorporated.
  3. Bake the cheesecake: Pour the filling over the crust, smoothing the top. Bake at 325°F (160°C) for 45-50 minutes, until slightly jiggly. Cool on a wire rack and refrigerate for at least 4 hours.
  4. Prepare the chocolate ganache: Heat heavy cream until steaming, then pour over dark chocolate chips and stir until smooth.
  5. Serve the cheesecake: Remove from the springform pan, drizzle with ganache, and garnish if desired. Slice and enjoy!
