A delightful dish combining fresh Mediterranean flavors with tender cod in a rich tomato basil sauce.

  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp fresh basil, chopped (for garnish)
  • 1 tbsp lemon juice
  • 1 tbsp capers (optional)
  • 1 tbsp balsamic vinegar (optional)

Instructions

  1. Begin by seasoning the cod fillets generously with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Carefully add the cod fillets to the pan, searing them for about 3-4 minutes on each side until golden brown. Remove the fillets and set aside.
  3. In the same skillet, add the minced garlic and sauté for about a minute until fragrant.
  4. Next, introduce the canned diced tomatoes, dried oregano, and basil to the skillet, stirring and simmering for about 5-7 minutes.
  5. If using capers and balsamic vinegar, stir them into the sauce now.
  6. Return the seared cod fillets to the skillet, spooning some of the sauce over the fish and cooking together for an additional 2-3 minutes.
  7. To finish, squeeze fresh lemon juice over the top and garnish with chopped basil.
  8. Plate the cod fillets, topping generously with the tomato basil sauce before serving.
