A delightful twist on traditional fries, these Crispy Parmesan-Gilded Carrot Fries are easy to prepare and perfect as a healthy snack or side dish.

Ingredients

  • 2 pounds of carrots, peeled and sliced into 1/4 inch thick ‘fries’
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1/2 cup of grated Parmigiano Reggiano (Parmesan cheese)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the sliced carrot fries with olive oil, salt, and pepper in a large bowl.
  3. Sprinkle the grated Parmesan cheese over the carrots and toss again to coat.
  4. Spread the fries in a single layer on a parchment paper-lined baking sheet.
  5. Roast the fries for about 16-20 minutes, stirring halfway through.
