  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup sour cream
  • 1 cup unsalted butter, room temperature (for frosting)
  • 4 cups powdered sugar
  • 23 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Food coloring (pastel pink, blue, yellow, or purple)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Mix the dry ingredients: flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream together the butter and sugar until light and fluffy in a large bowl.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla extract.
  6. Alternate adding the dry ingredients and the milk/sour cream mixture until just combined.
  7. Scoop the batter into the lined cupcake liners, filling them about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.
  10. Beat the butter for frosting until smooth and creamy.
  11. Gradually add the powdered sugar, mixing well.
  12. Add milk until the frosting reaches the desired consistency.
  13. Mix in the vanilla extract.
  14. Divide and color the frosting with food coloring.
  15. Frost the cupcakes with a piping bag and star tip.
  16. Top with sprinkles or edible glitter.

Notes

Ensure all ingredients are at room temperature for best results. Don’t overmix the batter for tender cupcakes.
