A delightful twist on the classic lunchbox favorite, these cookies are rich in peanut butter flavor with a fruity jam center.

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup jelly or jam (any flavor)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the peanut butter, sugar, egg, vanilla extract, and salt in a mixing bowl, stirring until smooth.
  3. Roll the dough into small balls, about 1 inch in size, and place them on a lined baking sheet.
  4. Press down on each ball with a fork to create a criss-cross pattern.
  5. Add a dollop of jelly or jam into the center of each cookie.
  6. Bake for 8-10 minutes until lightly golden around the edges.
  7. Cool on a wire rack before serving.

Notes

For best results, use room temperature ingredients and don’t skip the criss-cross fork pattern.
