  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt in a medium bowl.
  3. Beat together the softened butter and brown sugar until fluffy.
  4. Add in the egg, vanilla, and peppermint extract, mixing until combined.
  5. Fold in the dry ingredients until just combined.
  6. Beat the cream cheese and powdered sugar in another bowl until smooth.
  7. Scoop a tablespoon of cookie dough, create an indentation and fill it with cheesecake mixture.
  8. Sprinkle crushed peppermint candies on top.
  9. Place on a baking sheet and bake for 10-12 minutes.
  10. Cool on the baking sheet before transferring to a cooling rack.
