  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon peppermint extract
  • A few drops of red food coloring
  • Optional: crushed candy canes or colorful sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  4. Add the egg and peppermint extract to the butter mixture and mix until fully combined.
  5. Gradually add the flour to the wet ingredients, mixing until a soft dough forms.
  6. Divide the dough into two equal portions.
  7. Add red food coloring to one portion and mix until vibrant.
  8. Roll each dough portion into a rectangle about ¼ inch thick.
  9. Stack the red dough on top of the white dough gently.
  10. Roll the dough into a log shape and chill in the fridge for 20-30 minutes.
  11. Slice the chilled dough log into ¼-inch thick rounds.
  12. Place the shaped cookies on the prepared baking sheet and bake for 8-10 minutes.
  13. Allow the cookies to cool on the baking sheet before transferring them to a wire rack.
  14. Decorate with crushed candy canes or colorful sprinkles if desired.
