  • 4 slices hearty artisan bread
  • 23 tablespoons softened unsalted butter
  • 4 tablespoons basil pesto
  • 12 ounces sliced mozzarella cheese
  • 12 ounces sliced provolone cheese

Instructions

  1. Preheat a large cooking pan over medium to medium-low heat.
  2. Spread softened butter generously on one side of each slice of bread.
  3. Spread basil pesto on the inside of each slice.
  4. Create a layer of mozzarella on one half and provolone on the other half.
  5. Place the bread slices in the hot pan, buttered side down.
  6. Toast until the bread is crispy and the cheese has melted completely.
  7. Combine the two halves of the sandwich and press down lightly.
  8. Allow the grilled cheese to rest for 5 to 10 minutes before cutting.
