  • 4 boneless, skinless chicken breasts
  • 1 cup basil pesto
  • 1 cup mozzarella cheese, shredded
  • 1 large tomato, diced
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut a pocket in each chicken breast.
  3. In a bowl, mix the pesto, mozzarella, and diced tomato.
  4. Stuff each chicken breast with the mixture and secure with toothpicks if needed.
  5. Season with salt and pepper, then drizzle with olive oil.
  6. Place the stuffed chicken breasts in a baking dish.
  7. Bake for 25–30 minutes or until the chicken is cooked through.
  8. Garnish with fresh basil before serving.
