A divine dessert combining rich Philadelphia cream cheese with sweet-tart cherries, perfect for any gathering.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, melted
  • 3 cups Philadelphia cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 4 large eggs
  • 2 cups fresh cherries, pitted and halved
  • 2 tablespoons cherry juice
  • 1/4 cup powdered sugar (for topping)
  • 1/4 cup heavy whipping cream

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
  4. Beat together cream cheese, sour cream, granulated sugar, vanilla, and lemon juice until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cheesecake mixture over the cooled crust and tap the pan to release air bubbles.
  7. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  8. Cool the cheesecake completely at room temperature, then refrigerate for at least 4 hours or overnight.
  9. Combine cherries and cherry juice in a bowl; let sit for 10 minutes.
  10. Whip heavy cream and powdered sugar until stiff peaks form.
  11. Remove the cheesecake from the pan, top with whipped cream, and spoon the cherry mixture over it.
  12. Serve chilled and enjoy!

Notes

For a smoother cheesecake, make sure all ingredients are at room temperature. You can use a pre-made graham cracker crust if short on time.
