A classic dessert combining creamy cheesecake with fresh cherries on a buttery graham cracker crust.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, melted
  • 3 cups Philadelphia cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 4 large eggs
  • 2 cups fresh cherries, pitted and halved
  • 2 tablespoons cherry juice
  • 1/4 cup powdered sugar (for topping)
  • 1/4 cup heavy whipping cream

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
  4. Beat together cream cheese, sour cream, granulated sugar, vanilla extract, and lemon juice until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour the cheesecake mixture over the cooled crust and tap the pan to release air bubbles.
  7. Bake for 50-60 minutes until the center is set but slightly jiggly.
  8. Cool the cheesecake at room temperature and refrigerate for at least 4 hours, ideally overnight.
  9. Combine the fresh cherries and cherry juice in a bowl and let sit for 10 minutes.
  10. Whip the heavy cream and powdered sugar together until stiff peaks form.
  11. Remove the cheesecake from the pan, top with whipped cream, and spoon the cherries over it.
  12. Serve chilled and enjoy!

Notes

Ensure ingredients are at room temperature for a smooth batter. Do not rush the cooling process.
