  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 container (8 oz) whipped topping (e.g., Cool Whip)
  • 1 can (15 oz) crushed pineapple, well-drained
  • 1/2 cup sweetened shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing and flouring it.
  3. Mix in a large bowl the yellow cake mix, eggs, vegetable oil, and undrained crushed pineapple until smooth.
  4. Pour the batter into the prepared baking dish and bake for 25-30 minutes until a toothpick comes out clean.
  5. Cool the cake in the dish until room temperature.
  6. Beat the softened cream cheese and powdered sugar together, then gently fold in the whipped topping.
  7. Spread the frosting evenly over the cooled cake.
  8. Sprinkle the well-drained crushed pineapple over the frosting and add optional shredded coconut.
  9. Chill the cake in the refrigerator for at least 2 hours before serving.

Notes
