A delightful dessert that combines moist cake with the tropical goodness of pineapple and a luscious cream cheese topping.

  • 1 box of yellow cake mix
  • 3 large eggs
  • 1/2 cup of vegetable oil
  • 1 can (20 oz) of crushed pineapple, undrained
  • 1 package (8 oz) of softened cream cheese
  • 1 cup of powdered sugar
  • 1 container (8 oz) of whipped topping (like Cool Whip)
  • 1 can (15 oz) of crushed pineapple, well-drained
  • 1/2 cup of sweetened shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking dish.
  3. In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and undrained crushed pineapple. Beat until smooth.
  4. Pour the batter into the prepared baking dish.
  5. Bake for 25-30 minutes until a toothpick comes out clean.
  6. Allow the cake to cool completely.
  7. In another bowl, beat the softened cream cheese and powdered sugar until smooth.
  8. Fold in the whipped topping until fully incorporated.
  9. Spread the frosting evenly over the cooled cake.
  10. Sprinkle well-drained crushed pineapple on top and add shredded coconut if desired.
  11. Refrigerate for at least 2 hours before serving.

Notes

For more intense pineapple flavor, consider using fresh pineapple instead of canned.
