A vibrant dish that combines succulent shrimp in a sweet and savory teriyaki marinade with fragrant jasmine rice and fresh pineapple flavors.

  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup teriyaki sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp red pepper flakes (optional)
  • 2 cups cooked white or jasmine rice
  • 1 cup fresh pineapple, diced
  • 1 tbsp sesame oil (for the rice)
  • 2 green onions, chopped
  • 1/4 cup red bell pepper, diced
  • 1 tbsp soy sauce (for the rice)
  • 1 tsp rice vinegar
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Combine teriyaki sauce, soy sauce, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes (if using) in a medium bowl. Add the shrimp and toss to coat evenly in the marinade. Allow the shrimp to marinate for at least 15 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated shrimp, cooking for 2-3 minutes on each side until they turn pink and opaque. Set the shrimp aside.
  3. Add sesame oil to the same skillet and heat gently. Toss in chopped green onions, diced red bell pepper, and fresh pineapple. Sauté for about 2-3 minutes until tender and caramelized.
  4. Add the cooked rice, breaking it up with a spatula. Stir in soy sauce, rice vinegar, garlic powder, and season with salt and pepper. Cook for an additional 2-3 minutes.
  5. Assemble the stack using a ring mold or small bowl. Start with a layer of pineapple rice followed by the teriyaki shrimp. Repeat to create a layered presentation.
  6. Garnish with fresh cilantro, sprinkle sesame seeds on top, and serve with lime wedges.

Notes

Make sure the shrimp are thoroughly coated in the marinade for optimal flavor. Don’t overcrowd the pan when cooking shrimp for even cooking.
