Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 8-inch round cake pans.
  3. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  4. Beat the softened unsalted butter and white sugar in a large bowl until light and fluffy (about 3 minutes).
  5. Add the eggs one at a time, ensuring each is well beaten into the mixture.
  6. Stir in the vanilla extract and pink dragon fruit puree.
  7. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  8. Divide the batter evenly between the prepared cake pans.
  9. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  10. Cool the cakes in the pans for 10 minutes before transferring to a wire rack to cool completely.
  11. Beat the softened unsalted butter in a large bowl until smooth, then gradually add powdered sugar.
  12. Stir in vanilla extract, heavy cream, and pink dragon fruit puree for frosting.
  13. Frost the top of one cake layer, place the second layer on top, and frost the entire cake.
  14. Decorate with edible flowers if desired.
