  • 1 pinch salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup room-temperature buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the all-purpose flour, granulated sugar, baking soda, salt, and cocoa powder in a large mixing bowl.
  3. In a separate bowl, whisk the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and vanilla extract.
  4. Fold the wet ingredients into the dry mixture, mixing gently until just combined.
  5. Divide the batter evenly between the two prepared cake pans.
  6. Bake for 25-30 minutes and check for doneness with a toothpick.
  7. Allow the cakes to cool in their pans for 10 minutes before transferring to a wire rack.
  8. Beat the softened cream cheese and unsalted butter until smooth.
  9. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
  10. Frost between the layers, then on top and the sides of the cake.
  11. Decorate as desired with sprinkles or edible flowers.

Notes

Sift flour for a lighter cake and avoid overmixing the batter to maintain tenderness.
