A delightful and versatile sourdough flatbread that’s perfect for any occasion, offering a rich tangy flavor and soft texture.

Ingredients

  • 1/3 cup active sourdough starter
  • 2 1/4 cups all-purpose flour (adjust as needed)
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 3 tbsp Greek yogurt, sour cream, or ricotta cheese
  • 2 tbsp olive oil
  • 1/2 cup whole milk

Instructions

  1. Combine sourdough starter, flour, sugar, salt, yogurt, olive oil, and milk in a bowl until a soft dough forms.
  2. Add more flour if the dough is too wet or sticky, until manageable.
  3. Cover the bowl with a damp cloth and let it rest in a warm spot for about 480 minutes or until doubled in size.
  4. Turn the dough out onto a floured surface, divide into 8 pieces, and shape each into a ball.
  5. Preheat a cast iron skillet over medium-high heat, then roll each ball into a 1/4 inch thick disk.
  6. Cook each flatbread for 1-2 minutes on each side until golden brown and bubbles form.
  7. Transfer the cooked flatbreads to a wire rack and repeat the process. Serve warm.

Notes

For a more intense sour flavor, let the dough ferment longer than 8 hours. Experiment with adding herbs or spices for extra flavor.
