A delightful dish that transports you to tropical paradise, combining the sweetness of pineapple and ginger with juicy chicken thighs.

  • 1.3 lbs boneless, skinless chicken thighs
  • 2 tbsp ketchup
  • 3 tbsp agave
  • 4 tbsp rice vinegar
  • 4 tbsp canned pineapple juice
  • 1 tbsp sesame oil
  • 2 tbsp avocado oil (or any cooking oil)
  • 1 tsp ginger, minced
  • 4 garlic cloves, minced
  • 3 tbsp soy sauce

Instructions

  1. Combine all the marinade ingredients—ketchup, agave, rice vinegar, pineapple juice, sesame oil, minced ginger, minced garlic, and soy sauce—in a medium-sized bowl or a large zip lock bag. Mix thoroughly until all ingredients are well blended.
  2. Add the chicken thighs to the marinade, ensuring each piece is fully coated. Marinate in the refrigerator for 3 to 24 hours.
  3. Preheat a cast-iron skillet or grill over medium-high heat.
  4. Remove the chicken from the marinade and place it in the skillet or on the grill. Cook for approximately 6-8 minutes on each side.
  5. Serve the grilled Hawaiian chicken alongside rice and steamed vegetables.
