Delightful raspberry cinnamon rolls, combining sweet and tangy raspberries with warm cinnamon and topped with creamy frosting. Perfect for breakfast or brunch.

  • 2 1/4 tsp active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 tsp salt
  • 2 eggs, room temperature
  • 3 1/2 cups all-purpose flour
  • 1/2 cup raspberry jam or preserves
  • 2 tbsp unsalted butter, softened
  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (to reach desired consistency)

Instructions

  1. Dissolve the yeast and sugar in warm milk in a small bowl. Let it sit for approximately 5 minutes, allowing the mixture to become foamy.
  2. Combine the melted butter, salt, eggs, and your foamy yeast mixture in a large mixing bowl. Stir everything together until well combined.
  3. Add the flour gradually—one cup at a time—until your dough starts to come together. Knead for about 5-7 minutes until smooth and elastic.
  4. Form the dough into a ball and place it in a greased bowl, covering with a clean cloth. Allow it to rise in a warm area for about 1 hour or until doubled in size.
  5. Prepare the filling by mixing together the raspberry jam, softened butter, brown sugar, and ground cinnamon in a small bowl.
  6. Once the dough has risen, punch it down and roll it out on a lightly floured surface into a rectangle about 1/4 inch thick.
  7. Spread the raspberry filling evenly over the dough, leaving about an inch from the edges.
  8. Roll the dough tightly into a log starting from one of the long edges. Slice into 12 equal rolls.
  9. Place the rolls into a greased 9×13-inch baking dish, ensuring space between each for rising.
  10. Cover with a cloth and let the rolls rise for another 30 minutes.
  11. Preheat your oven to 350°F (175°C) and bake for 25-30 minutes or until golden brown.
  12. Make the cream cheese frosting by beating together softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and enough milk to reach a spreadable consistency.
  13. Cool the rolls slightly before drizzling with frosting and serve immediately. Enjoy!
