Delightful raspberry cinnamon rolls combine sweet, tart raspberries and aromatic cinnamon for an irresistible treat.

Ingredients

  • 2 1/4 tsp active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 tsp salt
  • 2 eggs, room temperature
  • 3 1/2 cups all-purpose flour
  • 1/2 cup raspberry jam or preserves
  • 2 tbsp unsalted butter, softened
  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (to reach desired consistency)

Instructions

  1. Dissolve the yeast and sugar in warm milk in a small bowl and let it sit for about 5 minutes until frothy.
  2. Combine the melted butter with salt, eggs, and the activated yeast mixture in a large mixing bowl.
  3. Add the flour gradually, mixing until the dough comes together, then knead for about 5-7 minutes until smooth and elastic.
  4. Form the dough into a ball, place it in a greased bowl, cover it, and let it rise for about 1 hour or until doubled in size.
  5. Mix together the raspberry jam, softened butter, brown sugar, and cinnamon to create the filling.
  6. Once the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick.
  7. Spread the raspberry filling evenly over the dough.
  8. Roll the dough tightly into a log and slice it into 12 rolls.
  9. Place the rolls in a greased baking dish, cover, and let rise for another 30 minutes.
  10. Preheat your oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden brown.
  11. Beat the cream cheese and butter until smooth, then mix in powdered sugar, vanilla, and milk to reach desired consistency for the frosting.
  12. Cool the rolls slightly before drizzling with frosting.

Notes

For a different filling, try using almond paste or chocolate spread.
