A luscious coffee cake featuring a rich cream cheese filling and delicious raspberry surprise, perfect for brunch or afternoon tea.

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup raspberry jam or fresh raspberries
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a 9-inch round cake pan.
  2. Combine the all-purpose flour, baking powder, baking soda, and salt in a large bowl.
  3. Cream together the granulated sugar and softened butter until light and airy.
  4. Add in the eggs, vanilla extract, and sour cream, stirring until well combined.
  5. Weave in the dry ingredients until no flour streaks remain.
  6. Beat the softened cream cheese and powdered sugar together until smooth.
  7. Pour half of the cake batter into your prepared pan.
  8. Spread the cream cheese mixture over this layer and add raspberry jam or fresh raspberries on top.
  9. Encase the filling with the remaining batter.
  10. Combine the brown sugar, flour, softened butter, and cinnamon in a bowl for the streusel.
  11. Sprinkle the streusel over the batter.
  12. Bake your cake for 40-45 minutes or until a toothpick comes out clean.
  13. Let it cool before serving.

Ensure your butter and cream cheese are softened at room temperature for easy mixing. Do not overmix the batter.
