Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) instant yeast
  • 1/2 tsp salt
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1 cup milk for the custard
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 cup fresh raspberries, mashed
  • 2 tbsp sugar

Instructions

  1. Mix flour, sugar, yeast, and salt in a large mixing bowl. Create a well in the center to add warm milk, softened butter, and the egg. Knead until smooth and elastic. Cover and let rise for about 60 minutes.
  2. Prepare the custard by warming milk in a saucepan. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth. Gradually add warm milk, whisking continuously. Return to the saucepan and cook over low heat until thickened. Stir in vanilla and cool.
  3. Punch down the risen dough and divide into balls. Flatten and fill with custard, then fold edges to enclose. Let rise for an additional 30 minutes.
  4. Preheat oven to 350°F (175°C). Top buns with mashed raspberries mixed with sugar.
  5. Bake for 18-20 minutes until golden brown. Serve warm, dusted with powdered sugar.
