Delightful tarts combining buttery shortbread with vibrant raspberry jam, perfect for cozy afternoons or festive gatherings.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour, sifted
  • 1/4 teaspoon salt
  • 3/4 cup raspberry jam
  • 2 tablespoons fresh lemon juice
  • Powdered sugar for dusting

Instructions

  1. Cream the softened butter and granulated sugar until light and fluffy.
  2. Incorporate the sifted flour and salt into the butter mixture until a soft dough forms.
  3. Shape the dough into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 35 minutes.
  4. While the dough chills, warm the raspberry jam and fresh lemon juice together in a saucepan over low heat until smooth.
  5. Preheat your oven to 350°F (175°C).
  6. Once the dough has chilled, roll it out to about 1/4 inch thick on a floured surface.
  7. Press the rolled-out dough circles into tart pans and prick the bottoms with a fork.
  8. Spoon 1-2 teaspoons of the warm raspberry filling into each tart shell.
  9. Bake for 15-20 minutes or until the edges turn golden brown.
  10. Cool the tarts completely before dusting with powdered sugar and serving.

Notes

Ensure butter is softened for easy creaming and do not skip the chilling step for a flaky texture.
