  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 cup fresh raspberries
  • 2 tablespoons raspberry jam

Instructions

  1. Preheat the oven to 325°F (165°C) and line a 9×9-inch baking pan with parchment paper.
  2. Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl. Press into the bottom of the prepared pan. Bake for 8-10 minutes, then let cool completely.
  3. Beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and vanilla extract.
  4. Crack in the eggs one at a time, ensuring each is mixed before adding the next. Stir in the sour cream.
  5. Mash the raspberries in a small bowl and mix with raspberry jam.
  6. Pour the cheesecake filling over the crust and swirl in the raspberry sauce.
  7. Bake for 45-50 minutes, or until the center is set with a slight jiggle.
  8. Cool completely in the pan, then refrigerate for at least 4 hours before serving.
  9. Cut into bars and serve cold.
