  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs

  • 1 cup sour cream
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup raspberry jam or fresh raspberries
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Combine 2 cups of all-purpose flour, 1 tsp of baking powder, 1/2 tsp of baking soda, and 1/2 tsp of salt in a mixing bowl.
  3. Cream together 1 cup of granulated sugar and 1/2 cup of softened unsalted butter until light and fluffy, about 3-5 minutes.
  4. Add in 2 eggs, 1 tsp of vanilla extract, and 1 cup of sour cream, stirring until combined.
  5. Mix the dry ingredients into the wet ingredients, being cautious not to overmix.
  6. Beat 8 oz of softened cream cheese and 1/4 cup of powdered sugar in a separate bowl until smooth.
  7. Pour half the batter into the prepared pan, then add the cream cheese mixture and 1/2 cup of raspberry jam or fresh raspberries.
  8. Cover with the remaining batter, ensuring the raspberry and cream cheese layers are sealed.
  9. Mix 1/2 cup of brown sugar, 1/4 cup of flour, 1/4 cup of softened butter, and 1/2 tsp of cinnamon for the streusel topping, and sprinkle over the batter.
  10. Bake for 40-45 minutes or until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack.
