A delightful dish featuring tender red snapper fillets in a creamy, aromatic Creole sauce.

  • 4 red snapper fillets, fresh and flaky
  • 2 tablespoons olive oil, fragrant and golden
  • 1/2 cup onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1/2 cup heavy cream
  • 1 tablespoon Creole seasoning
  • 1 dash paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the red snapper fillets with salt, pepper, and paprika.
  2. Place the fillets skin-side down in the skillet. Cook for 4-5 minutes until golden brown, then remove and set aside.
  3. In the same skillet, add chopped onion, bell pepper, and minced garlic. Cook for 3-4 minutes until softened.
  4. Stir in the diced tomatoes, Creole seasoning, thyme, salt, and pepper. Allow to simmer for 5 minutes.
  5. Pour in the heavy cream and stir thoroughly. Let simmer for 3-5 minutes until thickened.
  6. Return the fish to the skillet, allowing it to heat through for 2-3 minutes.
  7. Garnish with fresh parsley before serving.

Notes

Ensure your pan is hot enough to achieve a golden crust on the fish without overcooking.
