A delightful combination of cookies and cheesecake with a creamy peanut butter twist.

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups mini Reese’s peanut butter cups, chopped
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. Combine the creamy peanut butter, softened butter, granulated sugar, and brown sugar in a large mixing bowl. Beat until light and fluffy for about 2-3 minutes.
  3. Add the egg and 1 teaspoon of vanilla extract, and beat until the mixture is smooth.
  4. Whisk together the flour, baking soda, and salt in a separate bowl until well blended.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the chopped Reese’s peanut butter cups gently.
  7. Beat the cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract in another bowl until smooth and creamy.
  8. Roll the dough into 1-inch balls and place them on the baking sheet. Press your thumb into the center of each ball to create a well.
  9. Spoon about 1/2 teaspoon of the cream cheese mixture into each well.
  10. Bake for 10-12 minutes, until the edges are golden brown but the centers remain soft.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

The cookies freeze well, and for a delightful treat, serve warm with ice cream or chocolate sauce.
