A savory dish combining perfectly cooked ribeye steak with creamy, cheesy scalloped potatoes, perfect for any occasion.

  • 2 ribeye steaks, about 1-inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons butter
  • 2 sprigs fresh rosemary (optional)
  • 4 large russet potatoes, peeled and thinly sliced
  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and butter a 9×13-inch baking dish generously.
  2. Melt 2 tablespoons of butter in a saucepan over medium heat, add minced garlic and cook for about 1 minute.
  3. Stir in heavy cream, whole milk, salt, black pepper, and nutmeg, bringing to a gentle simmer.
  4. Reduce heat and stir in cheddar and Parmesan cheese until melted and smooth.
  5. Layer half of the sliced potatoes in the prepared baking dish, then pour half of the cheese mixture over them.
  6. Repeat with the remaining potatoes and cheese mixture, cover with aluminum foil, and bake for 45-50 minutes.
  7. Remove foil, sprinkle extra cheese on top, and bake for an additional 10 minutes until golden and bubbly.
  8. Garnish the dish with chopped parsley.
  9. Heat olive oil in a skillet over medium-high heat, season ribeye steaks, and cook for 4-5 minutes per side for medium-rare.
  10. Add butter and rosemary in the last minute, basting the steaks.
  11. Let the steaks rest for a few minutes before serving them alongside scalloped potatoes.

Notes

Allow ribeye steaks to come to room temperature before cooking for even results. Experiment with different cheese varieties for the scalloped potatoes.
