A rich and indulgent cake layered with chocolate, gooey marshmallows, and creamy icing, perfect for any gathering.

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans
  • 4 cups mini marshmallows
  • 16 ounces confectioners’ sugar
  • 1/2 cup whole milk
  • 1/2 cup cocoa powder (for icing)
  • 1/4 cup unsalted butter, softened (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper to prevent sticking.
  2. Combine the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one by one, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the all-purpose flour and cocoa powder in another bowl.
  5. Gradually add the dry mixture to the butter mixture, alternating with the whole milk, until smooth.
  6. Fold in the chopped pecans gently, then pour the batter into the prepared pan.
  7. Bake for 25-30 minutes or until a toothpick comes out clean or with a few moist crumbs.
  8. For the icing, melt the butter in a saucepan, stir in the cocoa powder and milk, and whisk in the confectioners’ sugar.
  9. Sprinkle mini marshmallows on top of the warm cake and pour the warm icing over them.
  10. Allow the cake to cool slightly before serving.

Notes

For best results, use fresh ingredients and allow the cakes to cool before icing.
