A delightful dish combining tender gnocchi, earthy mushrooms, and vibrant spinach in a rich cream sauce, perfect for weeknight meals or special occasions.

  • 1 tablespoon olive oil
  • 8 oz crimini mushrooms, sliced
  • Salt and pepper to taste
  • 16 oz potato gnocchi
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 5 oz fresh spinach
  • 1/4 teaspoon salt
  • Coarsely ground black pepper to taste
  • Red pepper flakes to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms seasoned with salt and pepper, sautéing until browned for about 1-2 minutes. Remove half of the cooked mushrooms and set aside.
  2. Cook the gnocchi in the same skillet, adding chicken broth, heavy cream, minced garlic, Italian seasoning, smoked paprika, and some salt. Bring to a gentle boil, then reduce heat, cover, and cook for 5 minutes.
  3. Add the fresh spinach and continue to cook on medium heat for another 5 minutes, stirring occasionally until wilted. Cook longer for a thicker sauce if desired.
  4. Season your dish, adjusting salt, black pepper, and red pepper flakes as needed.
  5. Finish the dish by topping the creamy gnocchi with the reserved mushrooms.

Notes

For extra flavor, sprinkle with freshly grated Parmesan cheese before serving. Fresh herbs can enhance the dish significantly. Consider adding grilled chicken or shrimp for a heartier version.
