  • 2 pounds Yukon gold or red potatoes
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 4 ounces goat cheese
  • 1/4 cup heavy cream
  • 1 tablespoon lemon juice
  • Fresh herbs (such as parsley or chives) for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into wedges or cubes.
  3. Toss the potatoes with olive oil, salt, and pepper in a bowl.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Roast for 25-30 minutes or until golden brown, turning halfway through.
