  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes thoroughly, then cut them into wedges or cubes.
  3. Combine the cut potatoes with olive oil, salt, and pepper in a large bowl.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Roast in the oven for 25-30 minutes, turning halfway through.
  6. Heat the heavy cream in a saucepan over low heat until warmed.
  7. Add the goat cheese to the warming cream and stir until melted.
  8. Stir in the lemon juice after removing the saucepan from heat.
