A creamy and rich shrimp bisque that warms the soul, perfect for a cozy dinner at home.

Ingredients

  • 2 tablespoons butter
  • 2 sticks celery, chopped
  • 1 medium carrot, chopped
  • 1/4 cup green onion, chopped
  • 2 cloves garlic, finely chopped
  • 1/3 cup plus 2 tablespoons flour
  • 1 cup heavy whipping cream
  • 56 cups homemade shrimp stock
  • 2 lb raw jumbo shrimp, peeled, deveined, and chopped
  • 4 slices rustic or French bread, cubed, and toasted
  • Salt and pepper to taste

Instructions

  1. Begin by melting the butter in a large pot over medium heat.
  2. Add the chopped celery, carrot, and green onion. Sauté for about 5 minutes.
  3. Introduce the finely chopped garlic and stir for another minute.
  4. Add the flour to the pot, mixing it thoroughly while stirring for an additional minute.
  5. Gradually incorporate the heavy whipping cream, stirring continuously.
  6. Slowly pour in the homemade shrimp stock, stirring, and allow it to cook until it thickens, about 10 minutes.
  7. Add the chopped shrimp, bringing to a gentle boil. Reduce the heat and let it simmer for about 10 minutes.
  8. Season the bisque with salt and pepper to taste. Serve hot, garnished with toasted croutons and a sprinkle of green onion.

Notes

For a lighter version, use coconut or almond milk instead of heavy cream.
