Delicate French pastries with a tender shell and luxurious dark chocolate ganache infused with rose water.

Ingredients

  • 1 1/2 cups powdered sugar
  • 1 cup almond flour
  • 3 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1 tsp rose water
  • 1/4 cup unsweetened cocoa powder
  • A pinch of salt
  • 1/2 cup heavy cream
  • 4 oz dark chocolate (70% cocoa), finely chopped
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Pulse the powdered sugar and almond flour together in a food processor until fine.
  3. Beat the egg whites with a pinch of salt until soft peaks form, then gradually add the granulated sugar.
  4. Fold in the almond flour mixture in batches to avoid deflating the egg whites.
  5. Add the rose water and cocoa powder to the batter, folding gently until fully incorporated.
  6. Transfer the batter into a piping bag and pipe small circles onto the baking sheets.
  7. Tap the baking sheets to release air bubbles and let rest for about 30 minutes until dry.
  8. Bake for 15-18 minutes and let cool completely.
  9. Heat the heavy cream until simmering, then pour over the chopped dark chocolate and stir until smooth.
  10. Spread the ganache onto the flat side of one shell and sandwich with another.
  11. Refrigerate for 24 hours before serving for the best flavor.

Notes

Ensure egg whites are at room temperature for the best texture. Sift the almond flour and powdered sugar together to avoid lumps.
