  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1/4 teaspoon salt
  • 1 egg white or 3 tablespoons meringue powder
  • 1 3/4 cups powdered sugar for icing
  • 1/2 teaspoon lemon juice
  • Gel food colors (pink, purple, green, yellow)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together the all-purpose flour, powdered sugar, and salt in a medium bowl.
  3. Cream the softened butter, vanilla extract, and almond extract together in a large bowl until light and fluffy, about 2-3 minutes.
  4. Gradually add the dry ingredients to the butter mixture, stirring until a soft dough forms.
  5. Roll the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  6. Roll out the chilled dough on a floured surface to about 1/4-inch thickness, and cut into floral shapes.
  7. Place the shaped cookies onto the prepared baking sheets and bake for 10-12 minutes until edges are lightly golden.
  8. Allow the cookies to cool on a wire rack completely before preparing royal icing.
  9. Beat the egg whites until stiff peaks form (or mix meringue powder with water), then gradually add powdered sugar and lemon juice until thick and glossy.
  10. Divide the icing into bowls and tint with gel food colors for desired designs.
  11. Decorate the cooled cookies with royal icing, allowing each layer to set before adding more details. Let harden before serving.
