  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1 pinch of salt
  • 1 egg white or 3 tablespoons of meringue powder (for icing)
  • 1 3/4 cups powdered sugar (for icing)
  • 1/2 teaspoon lemon juice
  • Gel food colors (pink, purple, green, yellow)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Begin by creaming the softened butter with powdered sugar until light and fluffy.
  3. Add the vanilla and almond extracts, along with a pinch of salt, mixing until combined.
  4. Gradually incorporate the flour, adding it in 1/4 cup at a time until the dough comes together.
  5. On a floured surface, roll out the dough to about 1/4 inch thickness.
  6. Use a cookie cutter to cut out floral shapes and transfer them to the baking sheet.
  7. Bake for 8-10 minutes or until lightly golden around the edges.
  8. Once baked, cool the cookies completely on a wire rack.
  9. For the royal icing, whisk the egg white or meringue powder with lemon juice until frothy.
  10. Gradually add the powdered sugar to the icing until smooth and stiff peaks form.
  11. Divide the icing into bowls and add gel colors to create various shades.
  12. With a piping bag, outline and fill in the cookies with royal icing.
  13. Allow the cookies to dry for at least 2-3 hours before serving.

Notes

Use softened butter for easy creaming and let cookies cool completely before icing for a smooth finish.
