Delightful salmon balls served with a creamy avocado sauce, perfect for appetizers or a healthy meal.

Ingredients

  • 1 lb fresh salmon fillets, skin removed and chopped
  • 1/2 cup breadcrumbs or almond flour
  • 1 egg
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp lemon zest
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying
  • 1 ripe avocado
  • 2 tbsp Greek yogurt or sour cream
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 tbsp water, or as needed

Instructions

  1. Prepare the salmon: Pulse the salmon fillets in a food processor until finely chopped.
  2. Combine ingredients: In a mixing bowl, mix chopped salmon, breadcrumbs or almond flour, egg, parsley, green onions, garlic powder, lemon zest, salt, and pepper.
  3. Shape the balls: Form the mixture into small balls, about 1-2 inches in diameter.
  4. Cook the salmon balls: Heat olive oil in a skillet over medium heat and cook the balls for about 4-5 minutes on each side until golden brown.
  5. Make the avocado sauce: Blend avocado, Greek yogurt, lime juice, minced garlic, salt, pepper, and water until smooth.
  6. Serve and enjoy: Serve the golden salmon balls with the creamy avocado sauce for dipping.

Notes

For added flavor, consider adding cayenne pepper or smoked paprika to the mixture.
