Juicy, flaky cod fillets coated in a blend of spices for a beautifully charred, flavorful experience.

  • 4 cod fish fillets, 5-6 oz each
  • 2 tablespoons olive oil, plus more for rubbing on fish
  • 1 tablespoon butter
  • 1 tablespoon paprika (smoked or sweet)
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon dried thyme

Instructions

  1. Begin by preparing the blackening spices. In a small bowl, combine the paprika, onion powder, garlic powder, kosher salt, black pepper, cayenne pepper, oregano, and thyme. Mix well until all the spices are fully incorporated.
  2. Pat the cod fillets dry with a paper towel; this ensures a nice crust forms during cooking. Next, rub each side of the fish with approximately 1 teaspoon of olive oil.
  3. Generously coat both sides of each fish fillet with the spice mix, making sure to shake off any excess.
  4. Heat the remaining olive oil in a large skillet over medium-high heat. Once hot, carefully place the seasoned cod fillets in the skillet. Cook for about 3-5 minutes until the spices turn black and form a lovely crust.
  5. After that, add a tablespoon of butter to the pan. Flip the fish and cook for an additional 1-2 minutes until easily flaked.
  6. Serve the blackened cod warm with a side of fluffy rice and a crisp green salad.

Notes

Let the cod sit at room temperature for about 15 minutes before cooking for even cooking. Store leftovers in an airtight container for up to three days.
