A hearty chuck roast cooked to perfection, paired with creamy blue cheese gravy and Yukon gold potatoes for a comforting meal.

  • 34 pounds chuck roast
  • 2 tablespoons vegetable oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 yellow onion, halved and thinly sliced
  • 8 small Yukon gold potatoes
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 6 sprigs fresh thyme
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 325°F.
  2. Season the chuck roast with salt, pepper, and thyme.
  3. Heat vegetable oil in a large pan over medium-high heat.
  4. Add the seasoned roast to the pan and sear for 4-5 minutes on each side.
  5. Place the halved onions and Yukon gold potatoes around the roast.
  6. Combine beef broth, Worcestershire sauce, and thyme in a bowl; pour over the roast.
  7. Cover the pan and place it in the oven; cook for 3 to 3.5 hours.
  8. Remove from the oven, discard thyme, and lift out potatoes and roast.
  9. Stir in heavy cream and blue cheese into the pan juices, whisk until thickened (about 6-8 minutes).
  10. Break the roast into chunks and serve with potatoes and blue cheese gravy.

Notes

Searing is key for flavor. You can use a bone-in roast for more flavor and consider a slow cooker option for ease.
