A delightful dish that combines the richness of cheese with fresh spinach, perfect for weeknight dinners or family gatherings.

  • 1 pre-made pie crust (9-inch)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, washed and chopped
  • 1 cup ricotta cheese
  • 1 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 teaspoon nutmeg
  • Salt and pepper, to taste
  • 1 tablespoon fresh dill or 1 teaspoon dried dill
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat, then sauté the onion until translucent, about 5 minutes.
  3. Add minced garlic and continue cooking for an additional minute.
  4. Stir in the chopped spinach until wilted, about 3-4 minutes, then remove from heat and let cool slightly.
  5. Combine the ricotta, feta, Parmesan cheese, and eggs in a mixing bowl, mixing until well blended.
  6. Add the cooled spinach and onion mixture, then stir in nutmeg, salt, pepper, and dill.
  7. Roll out the pre-made pie crust and fit it into a 9-inch pie dish.
  8. Spoon the spinach and cheese filling into the crust.
  9. Roll out a second pie crust, place it over the filling, and seal the edges by crimping them.
  10. Brush the top crust with beaten egg.
  11. Bake for 35-40 minutes until golden brown.
  12. Allow to cool for 10 minutes before slicing.

Notes

Ensure spinach is fresh and thoroughly washed. Avoid overcooking the spinach to maintain texture.
