A refreshing and creamy strawberry ice cream perfect for summer gatherings.

Ingredients

  • 2 cups fresh strawberries, sliced
  • 1/2 cup granulated sugar (for marinating)
  • 1 tablespoon lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar (for ice cream base)
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry puree

Instructions

  1. Combine the sliced strawberries, 1/2 cup of granulated sugar, and lemon juice in a bowl. Let sit for 10-15 minutes.
  2. Mash or blend the strawberries to create a puree.
  3. Whisk together the heavy cream, whole milk, 3/4 cup of granulated sugar, and vanilla extract in a separate bowl until sugar dissolves.
  4. Fold in the strawberry puree into the cream mixture.
  5. Pour the mixture into an ice cream maker and churn for 20-25 minutes.
  6. Transfer to an airtight container and freeze for at least 4 hours until firm.
  7. Scoop into bowls and serve.

Notes

For richer flavors, allow the strawberry mixture to chill longer before churning. If you don’t have an ice cream maker, freeze the mixture in a shallow dish and whisk every 30 minutes.
