A delightful pasta dish combining fresh tomatoes, spinach, and succulent shrimp in a creamy sauce.

Ingredients

  • 8 oz pasta (linguine or spaghetti), cooked
  • 1 tbsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil, chopped, for garnish

Instructions

  1. Cook the pasta according to the package instructions, drain, and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink. Remove shrimp and set aside.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Toss in the halved cherry tomatoes and cook for 3-4 minutes until soft.
  5. Add fresh spinach and cook until wilted.
  6. Pour in the heavy cream and simmer, stirring to combine.
  7. Incorporate Parmesan cheese, dried oregano, salt, and pepper. Stir until melted and sauce thickens.
  8. Add the cooked pasta and shrimp back into the skillet and toss to coat in the sauce.
  9. Serve hot, garnished with fresh basil.

Notes

Use fresh herbs for a vibrant flavor. Adjust seasoning to taste while cooking.
