A comforting soup version of traditional lasagna packed with rich flavors and creamy texture, perfect for chilly nights.

  • 1 lb ground turkey sausage
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 (14.5 oz) can crushed tomatoes
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat a large pot over medium heat and add the ground turkey sausage. Cook until browned and fragrant, draining any excess fat.
  2. Add the chopped onion and minced garlic to the pan. Sauté until the onion becomes soft and translucent.
  3. Pour in the chicken broth and bring the mixture to a gentle simmer.
  4. Add in the crushed tomatoes, broken lasagna noodles, dried basil, oregano, and red pepper flakes (if using). Season with salt and pepper, then let everything cook for about 10-12 minutes.
  5. Stir in the heavy cream, ricotta, Parmesan, and mozzarella cheeses. Gently mix until the cheeses have melted.
  6. Taste your soup and adjust the seasoning if necessary. Ladle the soup into bowls and garnish with freshly chopped parsley.

Notes

Avoid overcooking the noodles and do not let the soup boil vigorously after adding the cream to prevent separation.
