A delightful twist on the classic sandwich combining tender chicken, vibrant bell peppers, sweet onions, and gooey cheese, perfect for weeknight dinners or gatherings.

Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons olive oil
  • 1 tablespoon unsalted butter
  • 1 large yellow onion, thinly sliced
  • 2 bell peppers (green and red), sliced
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning (optional)
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 6–8 slices provolone (or white American cheese)
  • 4 hoagie rolls, split (lightly toasted optional)
  • Optional spreads: garlic-herb mayo, Dijon, or pat of butter

Instructions

  1. Combine the sliced chicken with Worcestershire sauce, 1 teaspoon of olive oil, ½ teaspoon of kosher salt, and black pepper in a bowl. Toss well to season.
  2. Heat a large skillet over medium-high heat, add 1 teaspoon of olive oil and unsalted butter. Once hot, add onions and bell peppers. Cook for 6–8 minutes.
  3. Stir in minced garlic and Italian seasoning (if using) and cook for an additional 30 seconds. Transfer to a plate once done.
  4. Add the seasoned chicken to the same skillet. Cook for 3–4 minutes until thoroughly cooked and lightly browned.
  5. Return the onion and pepper mixture to the skillet and form into four mounds. Top with provolone cheese.
  6. Cover the skillet for 30–60 seconds to melt the cheese.
  7. Assemble the hoagie rolls with the chicken and vegetable mixture. Add optional spreads if desired.
  8. Serve hot and enjoy!

Notes

Ensure the skillet is preheated for proper searing. Adjust seasoning to taste and consider toasting the rolls for added crunch.
