  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 baguette or crusty bread, sliced
  • 1 clove garlic, halved

Instructions

  1. Prepare the Avocado Mixture: Start by cutting the ripe avocados in half, gently removing the pits, and scooping the luscious green flesh into a mixing bowl. Add lime juice along with salt and pepper. Then, using a fork, smash the avocados to your preferred consistency.
  2. Mix the Toppings: In a separate bowl, combine diced cherry tomatoes, finely chopped red onion, and fresh cilantro. Drizzle the olive oil over the mixture and season with salt and pepper. Toss gently to ensure even distribution.
  3. Toast the Bread: Preheat your oven to 375°F (190°C). Place the slices of baguette on a baking sheet, drizzle with olive oil, and toast for about 10 minutes until golden brown. Rub the cut side of each toasted slice with the garlic clove.
  4. Assemble the Bruschetta: Spread the smashed avocado mixture onto each slice of toasted bread and top with the tomato mixture.
