  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 egg white (or 2 tablespoons meringue powder)
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon lemon juice
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  4. Beat the softened butter and granulated sugar together until light and fluffy.
  5. Add the egg, vanilla extract, and optional almond extract, stirring until well incorporated.
  6. Gradually add the dry flour mixture to the wet ingredients, mixing until a soft dough forms.
  7. Roll out the dough to about 1/4 inch thick on a floured surface.
  8. Cut out snowflake designs and place on baking sheets.
  9. Bake for 8-10 minutes, or until edges are lightly golden.
  10. Cool cookies completely on a wire rack.
  11. Whisk the egg white or meringue powder with lemon juice until soft peaks form.
  12. Add powdered sugar until stiff peaks form.
  13. Divide icing for food coloring if using, and decorate the cooled cookies.
  14. Let the icing dry completely before serving.
