  • 1 1/2 cups sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract, and beat until well combined.
  5. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Roll the dough into 1-inch balls and coat each in sugar.
  8. Place the dough balls on the prepared baking sheets, flatten slightly, and bake for 8-10 minutes.
  9. Allow cooling on the baking sheets for a few minutes before transferring to a wire rack.
