  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or 1 cup milk plus 1 tablespoon lemon juice)
  • 2 large eggs
  • 1/4 cup melted unsalted butter
  • Extra butter for brushing the tops
  • 1/3 cup honey
  • 1 cup fresh or frozen corn kernels (thawed if using frozen)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. Whisk together the cornmeal, flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Beat the eggs in another bowl, then mix in the buttermilk, melted butter, and honey until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Fold in the corn kernels evenly.
  6. Fill each muffin cup about three-quarters full with the batter.
  7. Bake for 12-15 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  8. Brush the tops with melted butter and a drizzle of honey.
  9. Let cool for 5 minutes before transferring to a wire rack.
