Ingredients

  • 12 ounces large sea scallops
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon Cajun seasoning
  • Salt and black pepper to taste
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon red pepper flakes (optional)
  • 0.5 cup heavy cream
  • 0.5 cup chicken or seafood broth
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse scallops under cold water and pat dry.
  2. Season with salt and black pepper.
  3. Heat olive oil in a skillet over medium-high heat; add butter.
  4. Sear scallops for 2-3 minutes until golden brown.
  5. Flip and cook for another 2 minutes.
  6. In the same pan, lower heat; add garlic and shallot.
  7. Stir in Cajun seasoning, smoked paprika, and red pepper flakes.
  8. Slowly add heavy cream and broth; let simmer.
  9. Stir in Parmesan cheese until melted, then add lemon juice.
  10. Return scallops to the sauce; coat well, garnish with parsley, and serve.

Ensure scallops are dry before cooking and do not overcrowd the skillet for best results.
