A quick and nutritious Spinach Casserole with Feta Cheese that’s perfect for family gatherings.

  • 3 large Eggs, beaten
  • 2 cups Cottage Cheese
  • 10 ounces Frozen Chopped Spinach, thawed and drained
  • 1/3 cup Crumbled Feta Cheese
  • 1/3 cup Diced Sweet Onion
  • 1/4 cup Melted Butter
  • 2 tablespoons Freshly Grated Parmesan
  • 1/8 teaspoon Black Pepper
  • 1/8 teaspoon Garlic Powder
  • A dash of Nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 1 1/2-quart casserole dish and set aside.
  3. Combine the beaten eggs, cottage cheese, chopped spinach, feta, onion, melted butter, Parmesan, black pepper, garlic powder, and nutmeg in a large bowl.
  4. Stir well until all ingredients are mixed evenly.
  5. Transfer the mixture to the prepared casserole dish, spreading it out evenly.
  6. Bake uncovered for about 40 to 45 minutes, or until the center is nearly set.
  7. Allow the casserole to rest for 5 to 10 minutes before serving.
  8. Serve warm.

Notes

For extra texture, mix in chopped sun-dried tomatoes or olives. Try different cheeses for unique flavors.
